What I Ate Wednesday // Please don’t judge me :/

I have posted a few WIAW over on skinnedcartree in the past, now I’m trying to get a bit more regular on here, I thought it would be a great post to write every now and then.

Last Wednesday was my day off work and this is what I put in my bellleeehhhh:

Breakfast.

Breakfast was a bowl of Jordan’s granola which I got in Septembers Degustabox, topped with blueberries, raspberries and blackberries – my favourite fruit.

Dinner.

Ok. This is the point in our relationship that you’re going to discover I am crazy.

I had to buy these courgettes, you see. I just had to. I had no idea what to do with them so it was one of those ‘use what you have in’ type moments.

I had decided I wanted to do something where I roast the courgettes and give them some type of filling or topping. But I didn’t know what. Then I remembered the Quorn chicken style slices I also had to buy and chopped them up, then mixed in some carrot and butternut squash soup that I had open, then put it on top to courgettes and oven baked the shit out of it.

And no, I wasn’t sure if this would be okay.

But as everything was going off and I had no other food in, I had no over choice but to give it a go.

I put some humous on the side and it actually was nice! So nice that I had it the next day!

Snack.

By the time I was hungry again, it was around 8pm and I didn’t want something too filling, so went with a plate of fruit that I nibbled on while doing the internet.

Sharon fruit, blueberries, mango and pomegranate.

I didn’t eat anything else because I knew I was going to the cinema to make use of the £50 gift card I was sent for a giveaway/campaign on my lifestyle blog.

I had already decided that I was going to get some delicious nachos with salsa and cheese! Opps!

There you have it, what I ate Wednesday. It doesn’t look very balanced, but if I didn’t go got the cinema and have the nachos, I would have had a small, healthy meal. But you have got to let your hair down sometimes, right?

    Ummm I didn’t eat anything near as healthy as you did! I think the best thing I ate was some natural yoghurt sprinkled with granola. I’m not even going to tell you about the four French Fancies I ate…..

    Wow so healthy and so much goodness on these plates – the breakfast looks so yummy and I love what you have done with the Quorn and courgettes
