Breakfast was a pot of mango. I could basically eat this every second of the day. Mango = best.
For lunch I made an amazing roast butternut squash salad.
I cut u a butternut squash into cubes, roasted in the oven for about 30 minutes after seasoning with pepper, olive oil and butternut squash.
I then mixed 2 avocado with peppers and bagged peppery rocket salad, mixed the squash in and served with hummus. It was delicious.
As I had made a massive bowl of it, I had 3 plates of it during the day to use it up before it went off.
