I had a smoothie for breakfast before heading to the gym. It had banana, blackberries, blueberries, strawberries, chia seeds, bee pollen and peanut butter in. Yum. Kept me full for ages!
For dinner I had a Mexican inspired bowl. I had a mixture of beans:
- Black beans
- Kidney Beans
I boiled them in a pan and then put garlic paste and fresh coriander in.
I also boiled quinoa with a spoonful of garlic and vegetarian red pesto.
I added guacamole and salsa to the side. It was delicious and I made enough to make a further 2 meals.
I had a pre-packed greek salad from Morrisons. I love this salad, even though I’m not a massive fan of tomatoes. If I cut them up in quarters I can eat them with other things. I wish I liked tomatoes but never had. I’ve tried to train myself to eat them so many times though haha!
